1/2 cup sugar
1/4 cup unsweetened cocoa powder
3 Tbsp cornstarch
1/4 tsp salt
2 1/4 cups Horizon Organic Milk, Whole or 2%
2 tsp vanilla extract
2 Tbsp Horizon Organic Butter
1/2 cup bittersweet or semisweet chocolate chips
Horizon Organic Heavy Whipping Cream, whipped, or Half & Half for serving
Whisk together sugar, cocoa, cornstarch and salt in a medium saucepan. Slowly whisk in milk. Bring to a boil over medium heat, stirring constantly. Reduce heat to simmer and cook for another 3 minutes, stirring and scraping bottom of pan. Remove from heat and stir in vanilla, butter and chocolate chips, stirring until chips are melted and pudding is smooth. Pour into six serving dishes and press plastic wrap over the top to prevent a skin from forming. Refrigerate at least two hours or overnight. To serve, top with whipped cream or pour a tablespoon of half and half onto each pudding.
Peppermint – Reduce vanilla to 1 tsp and add 1/2- 1 tsp peppermint extract, to taste. Top with whipped cream and crushed peppermint candies.
Mocha – Whisk 2 tsp instant espresso powder in with the sugar, cocoa, cornstarch and salt.
Peanut Butter – Add 1/4 cup smooth peanut butter with the milk. Substitute milk chocolate chips.
Mexican Spice – Add 1 tsp cinnamon and 1/8 tsp cayenne.
