2/3 cup sugar
1/4 cup cocoa powder
3 Tbsp cornstarch
1/4 tsp salt
1 tsp pumpkin pie spice, plus additional for serving
2 1/4 cups Horizon Organic Whole Milk
1 tsp vanilla extract
1/4 cup pumpkin puree
2 Tbsp Horizon Organic Unsalted Butter
1 cup Horizon Organic Heavy Cream
2 Tbsp sugar
In a medium saucepan, whisk together 2/3 cup sugar, cocoa powder, cornstarch, salt and pumpkin pie spice. Gradually whisk in milk. Stir continuously while cooking the mixture over medium heat for several minutes, until it comes to a boil. Once it begins to boil, continue stirring and cooking for an additional minute. Remove from heat and whisk in vanilla extract, pumpkin puree and butter.
Transfer the pudding to a medium mixing bowl and press a piece of plastic wrap right up against the pudding to keep it from developing a skin on top. Cool in the refrigerator for at least four hours. Before serving, whip together the heavy cream and 2 Tbsp sugar on high until soft peaks begin to form. Top each bowl with a small amount of whipped cream and a dash more pumpkin spice.
