1/2 cup Horizon Organic unsalted butter, softened
1 cup sugar
2 teaspoons instant coffee powder
1 cup Horizon Organic reduced fat milk
1 teaspoon vanilla
2 tablespoons molasses
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons Horizon Organic butter - streusel topping
1/2 cup flour - streusel topping
2 tablespoons brown sugar - streusel topping
1/4 cup chopped walnuts or pecans - streusel topping
Preheat oven to 350 degrees. Grease and flour 9x13-inch cake pan. Cream butter and sugar until blended. Add eggs and instant coffee, beating well. Stir in milk, vanilla and molasses. In a separate bowl, whisk together flour, baking powder and salt. Combine wet and dry mixtures until blended. Spread batter in prepared pan. For topping, using a pastry cutter or two forks, cut together butter, flour, sugar and nuts until mixture is crumbly. Sprinkle on top of batter. Bake 40-50 minutes, or until a knife inserted comes out clean.
