6 cups cubed unpeeled redskin potatoes (cut cubes about 3/4-inch per side)
3/4 cup Horizon Organic sour cream
1/4 cup mayonnaise
2 Tbsp. finely chopped fresh mint leaves
1/4 cup finely chopped fresh chives
1 tsp. Dijon mustard
Salt and pepper to taste
Boil or steam potatoes until they are just tender. Immediately plunge them into cold water to stop the cooking, then drain and pat them dry with a clean kitchen towel. Whisk together the remaining ingredients in a spacious bowl, add the potatoes, and toss gently until the dressing is well distributed. Chill the salad for at least two hours to allow the flavors to develop. Adjust salt and pepper, if needed, just before serving.
